Vegan fudge recipe



So I ventured out and wanted to make vegan fudge and have to say it was very good!!!!  I even had the approval from the husband and some people from my work.  I have never made almond butter but have heard how good it is and wanted to try something new.  Well, needless to say, my Tennessee kitchen was not prepared and I tried to make it with my Cuisinart food processor.  To make almond butter, I needed to process almonds for about 15 minutes until it made a beautiful butter consistency.  Well, it took the ENTIRE 15 minutes and then my poor little Cuisinart wedding gift started smoking and yes, my friends.....it completely stopped!  It is dead as a doornail now - my wedding gift was sacrificied for the sake of the vegan fudge.  Maybe next time I'll buy some almond butter next time.

Here is the picture of the almond butter after 15 LONG minutes of blending.

Here is the recipe -
1 cup almond butter
5 tablespoons cocoa (I actually added more cocoa because I like rich dark chocolate)
****I even added a little organic peanut butter too****

Pour into a dish and place in fridge.  Then cut out into cute little hearts or shapes of Texas or random fall leaves (these were the cookie cutters I could find)

Then enjoy!
